Open the crescent rolls and flatten half the can onto the bottom of the greased dish. Heat oil over medium heat and add potatoes. Push deli meat and potatoes to side of skillet and pour in beaten eggs. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. add the potatoes, water, salt and pepper.
