My lovely mama used to make this dish for us just about every weekend.
She would change it up now n then but this version is the very first!
Now I carry the tradition on with my kids in hopes that they will do the same!

Ingredients of Mama's brunch casserole
- You need 14 oz of package of breakfast maple sausage links(cut into small bite size pieces).
- It's 4 cup of any type of bread cubes ( she always just used the regular ole store bought loaves).
- Prepare 8 large of fresh eggs.
- Prepare 2 3/4 cup of milk.
- You need 1 1/4 tsp of ground mustard.
- Prepare 4 cup of cheese ( we use yellow and white cheddar).
- You need 1/2 of green pepper, chopped small.
- You need 1/2 of onion, chopped small.
- Prepare 4 oz of fresh mushrooms, chopped.
- It's 1 of salt n pepper...your preference.
Roll out the crescent roll & cover the entire bottom of your baking dish. After cooking sausage, drain grease & pour sausage on top of the dough. In a separate mixing bowl, mix the milk, pepper, & eggs together and pour on top of sausage.. Second layer half of the noodles over the sauce.
Mama's brunch casserole instructions
- Cut bread into about one inch cubes and set aside..
- In a med skillet fry sausage til browned. Drain n set aside..
- In another skillet fry onion n pepper til almost done and add mushrooms til everything is browned nicely. ( You can fry these to ur preference, we like ours to not have a crunch at all!!.
- Once step two n three are finished combine eggs in a large bowl and beat well, whisk in milk and mustard and stir in bread. Let sit for about 10 min..
- Add onion, pepper, and mushrooms to sausage and mix well. Add to your bread mixture once 10 min is up..
- Stir in 3 cups of cheese. Poor mixture into a sprayed 9x13 in dish and top with remaining cheese..
- Bake at 350°F (F) for about 45 min til nice and golden brown..
- Let rest on counter for about 10 min or so. Enjoy!!!.
