- In a hot skillet add a bit of olive oil and the chopped onions.
- Chop up the bresola (can use other dried/smoked beef , pork or lamb ) and the mushrooms.
- When the onions become golden brown add the bresola and mushrooms.
- While the filling is cooking take a round cutter and cut out the middle of the bread.
- Put one peace of the bread in a round backong mold (can be mettal ,or silicon) , and put a bit of the shredded mozzarella on top.
- On top of the cheese add the filling , and sprinckle the rest of the cheese on it..
- Close it up with the second peace of bread , and put in the oven at 180'c for 5 min..
- In the mean time make a sunny side up egg , and put the spring onion on top (before the eggwhite cooks compleatly)..
- Cook the hash brown (deepfry , or just pen fry with a bit of oil).
- Take out the mold from the oven , and carfully empty on the middle of the plate.
- Put the egg on top , and hash brown on one side.
- Mix the roka with sone olive oil and put on the opposite side.
- Decorate the plate with sone baby spinach and cherry tomatos.
- NOTE : if you like it spicy add some chopped chilli ; you can use chedder or brie depending on witch cheese you like ; dont add to much salt , as the beef should alredy have a lot ..
