- Preheat oven to 180oC.
- Lightly oil muffin tray.
- Beat eggs in a large jug. Add melted butter, flour and baking powder then whisk. Add milk until a thick but pouring consistency is achieved.

- Grate cheese.
- Season batter with salt and pepper then pour muffin batter into tray, filling 1/2 of each section.
- Add onion, chives, spinach and cheese to each tray compartment. Mix each compartment's contents with a spoon so the batter covers the fresh ingredients.
- Bake for 20mins.
- Remove from oven and allow to cool for 10mins before removing from the tray.
- Store in an airtight container for up to 1week. For future use, reheat each muffin for 15secs in a microwave.
