It's very easy to make, but you have to be patient!
I had to substitute a few ingredients to avoid going to the store but I think I still got the spirit of this recipe!

- You need of large fat Pork or beef sausage.
- You need of Large Onion slices.
- Prepare of large Tomatoes Sliced.
- It's of Salt & Pepper.
- It's of Pint/ litre boiling water.
- You need of Beef Stock cubes.
- Prepare of good slash of Balsamic Vinegar.
- You need of heaped tsp Corn Flour/ Starch.
We had mild Italian chicken sausage so I used that. It was pre-cooked so I skipped boiling it first. I fried the onion with a pinch of salt a grind or two of pepper and a bit of sugar. Add thyme, then gradually add stock.

- Either Fry Sausage in olive oil or grill them just so they are browned all over.
- When browned set aside if fried drain on kitchen pape.
- Fry the sliced onions in a large deep frypan, when opaque in colour stain off excess oil, and add the boiling water and stir.

A sausage recipe for a quick easy dinner with a side of peas or steamed vegetables to douse in the homemade gravy. I have to hand it to the Brits, they come up with great names for food. Made as written and without a hiccup. I've struggled with gravy in the past but has no issues whatsoever with this one. Not a huge sage fan but this was the perfect amount for us and it added a nice flavor.
